What is Dragon Well Tea?
Longjing tea which is translated as Dragon Well tea is a variety of roasted green tea typically grown in the Longjing region, Zhejiang province of China. It is majorly produced around the West Lake in Hangzhou in mild temperatures, diffused sunlight, and plentiful rainfall. The Chinese green tea has flattened spear-like leaves that split into two leaves when brewed. It is a superior quality, artisanal green tea and has a distinctive production method. The dragon tea, after being picked, is roasted on heated pans (firing) or woks. Alternatively, it may be steamed before it completely dries out. The oxidation process is prevented, making the dragon well tea rich in anti-oxidants and polyphenolic compounds and catechins.
Designated the title of “China Famous Tea”, the dragon well tea has toasty vegetal notes and the infusion imparts a beautiful yellow-green color.
Legends of Dragon Well Tea
Two Chinese folk tales go about dragon tea. Qianlong Emperor, the grandson Kangxi Emperor visited the West Lake for his vacation. He paid a visit to the Hu Gong Temple located under the Lion Peak Mountain. He was offered the Longjing tea and was tremendously impressed by it. He assigned the 18 bushes in front of the Hu Gong Temple a special imperial status. Another legend narrates that while visiting the temple near the lake he watched ladies picking up tea. He was infatuated by their actions and went on to try it himself.
Amid the event, he received a message that his mother was extremely ill and needed him in Beijing. He shoved some of the leaves under his sleeves and returned to his mother immediately. She noticed the smell of the leaves approaching from him and the tea was instantly brewed for her. It is said that the flattened leaves of the dragon tea are made to mimic the shape of the tea that the emperor brewed for his mother.

How to Brew the Dragon Well Tea?
- Boil spring or filtered water
- Initially pour some hot water in the cup to warm it. Later pour it out.
- Add some tea leaves to the cup. Fill a 1/3 cup of water with hot water. Stir it and later pour more water.
- Steep for 3-5 minutes
- Avoid sugar as the tea may already be slightly sweet
- The brew may impart vegetable, grassy notes with a hint of roasted chestnut.
Thus dragon tea is an imperial tea with numerous health benefits. The leaves are picked fresh, cooled, and roasted or fried and dried. It dispenses a long-lasting fragrance with a mellow taste. It bestows a relaxing effect on the body and may be consumed at any time of the day. However, pregnant or menstruating women are advised not to consume this green tea, so consulting your doctor before drinking this tea will be a good idea.
